You know, I thought about calling this section something more delicate like “Nose to Tail”, but that just seems to be avoiding the bloody beginning to it all (Not to mention that I think I’ve seen that title used elsewhere). What gets me is when a fellow omnivore tells me that they’re happy to eat meat, as long as they don’t have to see the animal die, or to even acknowledge that the meat came from an animal in the first place. To most farmers, the death of an animal, by our own hand or otherwise, is a very profound thing. Ironically, most farmers would probably not admit to that. However, it stands that we spend our lives raising these animals from birth, so it seems only fitting that we should be the ones to ensure a swift death and fitting use of the carcass.

Sheep means chops. Cattle means steak. Pigs means bacon, sausage, pancetta…
